Why our lettuce comes with its roots on

A living head keeps a week in the fridge. How we grow, cut and pack it.
Most lettuce in the supermarket was cut days before it reached the shelf. Ours is cut the morning before it reaches you, and we leave the roots on: the head is still alive when you open the bag.
Keep it in the bag in the fridge, roots and all, and take leaves as you need them. Our test heads stayed crisp for nine days.
